Is Christmas bringing out the amateur baker in you?

With Christmas nearly upon us, and cakes and treats in virtually every shop window - and office! it is almost impossible to not give in to temptation occasionally and indulge in a Christmassy treat, whether it be a mince pie, yule log or shortbread biscuit.

I have personally, along with quite a few colleagues, turned into an amateur baker for December only, and have made quite a few shortbread biscuits already this week. To inspire any fellow amateur Christmas bakers, I have included below a couple of Christmassy baking recipes to get you started! 

Easy Shortbread Biscuits

250g butter
110g caster sugar
360g plain flour
Method - Preheat your oven to 190C and then beat the butter and caster sugar until smooth. Once mixed, add the flour until it is all combined in a smooth paste. Roll out so that it is about 1cm thick and cut into your desired shape, place on a baking tray, sprinkle with caster sugar and place in your fridge for 20 minutes. After 20 minutes, place in the oven for approximately 15-20 minutes, or until golden brown. Once cooked, transfer to a wire rack to cool.
Easy Gingerbread Men

350g plain flour
1tsp bicarbonate of soda
2 tsp ground ginger
1 tsp ground cinnamon
125g butter
175g soft light brown sugar
1 egg
4 tbsp golden syrup
Method - Preheat the oven to 180C. Sift the flour, bicarbonate of soda, ginger and cinnamon into a food processor and add the butter and blend until the mix looks like breadcrumbs, then stir in the sugar. Lightly beat in the egg and golden syrup together and add to the food processor until the mixture comes together. Tip the dough out and knead until smooth, then wrap in Clingfilm and place in the fridge for 15 minutes. Roll out the dough until ½ cm thick and use gingerbread men cutters to cut out. Place on a baking tray lined with greaseproof paper and bake for 12-15 minutes, or until lightly golden brown. Once cooked, transfer to a wire rack to cool. Once cooled, decorate how you wish!
